PRESSED PANINI filled with cheeses

INGREDIENTS

5 Panini or ciabata slices (about 15cm x 6cm)
2 tbsp Olive oil
2 tbsp Basil pesto
2 Red bell peppers, roasted and skinned
Sea salt
250g Mozarella (the kind you buy in water), cut into slices
250g Gouda, cut into slices
3 Italian tomatoes, sliced
Freshly ground black pepper
Handful of fresh basil
1 cup Black olives, pitted and halved

HOW TO MAKE IT

Cut panini horizontally in half and scoop out some of the flesh.
Mix pesto and olive oil together and brush the insides of the panini bread.
Cut the peppers into strips and arrange on the bottom half of each panini slice.
Season lightly with salt.
Top with mozarella and season with pepper.
Arrange the basil, olives, tomato and gouda on top of the bread.
Close with top half of the panini.
Wrap it tightly in wax paper.
Place the bread under a tray with weight by using a brick or thick book on top.
Let it stand for 1 to 2 hours.
Cut it into thin slices and serve.
