RED GRAPE TRIFLE

Unlike other trifles, this one should be assembled directly before serving.

INGREDIENTS

250g Mascarpone
2 tblsp Castor sugar
2 Eggs, separated
1 tblsp Brandy
400g Red grapes, seedless
250g Mixed berries, fresh
2tbs Desert wine
2 cups Vanilla custard
1 cup Amoretti biscuits, coarsely broken or Ginger biscuits
1/2 cup Walnuts, coarsely broken

HOW TO MAKE IT

(This mascarpone cream is better made a day ahead)

Whisk mascarppone with egg yolks and sugar until smooth.
Whisk in the brandy.
Beat egg whites until stiff and fold it into the mascarpone.
Cover and refrigerate.
 
Wash fruit and pat dry.
Place in the bottom of a large glass bowl.
Sprinkle with desert wine.
Pour the custard over.
Sprinkle the biscuits and the nuts over.
Spoon mascarpone on top.
Serve immediately.
