Clover Bliss Red Velvet Mini Cheesecakes
For the base
150g chocolate or coconut biscuits, crushed
75g butter, melted
For the filling
250ml Clover Bliss Double cream yoghurt, Red Velvet flavor
300g cream cheese
100g icing sugar
1 tsp vanilla essence
For the icing:
1 cup Bliss Double cream yoghurt, Red velvet flavour
½ cup icing
Fresh strawberries for garnish
In a large bowl, combine the crushed biscuits and butter and mix together.
Add 1-2 tablespoons into cupcake cases that have been placed into a muffin tray and press down into the bottom so that if forms the base layer.
Whisk or use an electric beater to combine the Clover Bliss yoghurt, cream cheese, icing sugar and vanilla essence.
Mix until smooth. Spoon into on top of the bases on the cupcake cases until filled.
Allow to set in fridge.
Mix together the ingredients for the yoghurt icing and drizzle over the mini cheesecakes when ready to serve.
Garnish with strawberries as desired.
