Clover Classic Sheet Pan Lemon Chicken with Potatoes
An easy and delicious meal – all in one dish!
Time: 10 minutes
4-6 chicken drums and thighs
500g baby potatoes/sweet potatoe, halved
1 cup Clover Classic dairy snack
Juice and zest of 1 lemon
½ cup olive oil
1 handful fresh oregano or 1 tbsp dried
Handful fresh dill or fennel, roughly chopped
1 red onion, sliced thick
2-3 garlic cloves, bruised with skin on
Salt and pepper to taste
4 knobs of butter
Feta cheese to serve
Handful fresh parsley, chopped, for serving
½ cup olives to serve
Add the chicken to a large mixing bowl then add in the Clover Classic dairy snack, 2 tbsp fresh lemon juice and season with salt and pepper. Allow to marinate overnight or for at least 20 minutes.
Preheat the oven to 180C. Place the chicken, potatoes, onion slices and garlic cloves onto a sheet pan and drizzle over a generous amount of olive oil and add in the knobs of butter. Season with salt and pepper.
In a small bowl, combine the rest of lemon juice and zest, 1 tablespoon olive oil, 2 tablespoons Clover Classic dairy snack, oregano and dill. Once the chicken and potatoes are cooked through and tender, remove the garlic and mash with the lemon and herb mixture. Drizzle over the cooked chicken and potatoes. To serve, crumble over the feta, add in the olives and scatter over the parsley and a final squeeze of lemon.
Chefs Tip: If you want to make this meal with a lower carb intake, use sweet potatoes or pumpkin and you can add any veg to this recipe.
