Clover Krush Mango and Passion Fruit Bars
These breakfast bars with a glass of Clover Krush juice will keep you going!

For the base
2 cups muesli
1 cup oats
2 large eggs
2 tbsp honey
1 tsp vanilla essence
For the filling
½ cup flour
½ tsp cream of tartar
Pinch of salt
4 large eggs
2 large egg yolks
1 ½ cups Clover Krush fruit juice, Mango flavor
1 tbsp freshly squeezed lemon juice
½ cup brown sugar
2 tbsp butter
2-3 fresh granadilla pulp fruit for serving
Preheat the oven to 180C
In a large bowl, combine the muesli and oats. Mix in the eggs, honey and vanilla essence until well combined. Press into a greased square baking dish and bake in the oven for 10-15 minutes, until slightly golden brown.
To make the filling, whisk the flour, cream of tartar and salt in a bowl. In a saucepan, whisk the eggs, egg yolks, Krush juice, lemon juice and sugar to combine. Whisk in the dry ingredients.
Place the saucepan over a medium heat and gently cook the curd whilst whisking until the begins to thicken. Remove from heat and stir in the butter. Pour the curd through a sieve onto the baked muesli and spread out evenly. Bake for 15 -20 minutes. Allow to cool then set in fridge. Pour over the granadilla pulp and slice when ready to serve.
Chefs Tip: You can play around with the different flavours of Krush when making the curd – try the 6 Fruits flavor for an additional dose of vitamins.
