Simply Chicken Creamy Spinach Bread Bowls
An easy and delicious brunch or lunch recipe.

400g Simply Chicken Fingers
4 crispy bread rolls
4 cups shredded spinach
1 small onion, finely chopped
1 tsp garlic powder
200g cream cheese
salt and pepper, to taste
Preheat the oven to 180°C.
Cook the Simply Chicken Fingers according to package instructions. Make sure you cook them to be ready at the same time the bread rolls are ready.
Place the rolls onto a lined baking tray and using a serrated knife cut a hole at the top of each roll and scoop out the bread filling in the center.
Bring a non-stick pan to a medium heat, add the oil and onions. Allow the onions to sauté for 8-10 minutes until they have turned a golden brown colour. Then add the spinach and allow it to wilt down completely. Add the cream cheese and garlic powder, allow to melt down.
Season well with salt and pepper.
Add the filling to each roll and place the rolls into the oven to heat through for 4-6 minutes.
Serve the rolls along with the cooked Simply Chicken Fingers as dippers.
Chefs Tip:If you do not want to use cream cheese, simply replace it with a white sauce.
This is a great recipe to use those day old rolls left in your bread bin.
