1 pack linguine pasta 2 boneless skinless chicken breasts 2 tsp oil 2 Tbsp butter 2 tbsp cajun spice 3 garlic cloves, minced or 1 tbsp garlic powder 2/3 cup diced tomatoes 1 cup cream 1 cup Clover Classic dairy snack, plain flavour 1/2 cup grated parmesan cheese 2 Tbsp parsley, finely chopped, to serve
Method:
Cook the pasta according to pack instructions Season chicken with Cajun spice, salt and pepper and heat oil with butter in a large saucepan. Add in the chicken breasts and cook until golden in colour and cooked through. Remove from pan and add another knob of butter, then add in the garlic, diced tomato, cream and Clover Classic dairy snack. Allow to cook for a few minutes.
Slice the chicken and add into the creamy mixture along with the pasta and parmesan cheese. Add in the parsley and mix until combined. Serve with more parmesan cheese.
