Clover Classic Stuffed Avo Tacos
Move over Taco Tuesdays! Our Stuffed Avo tacos is a whole lot more delicious, filling and so tasty that you will want to eat them more than once a week.

2 medium ripe avos
500g beef mince
1 onion, chopped
2 tbsp taco seasoning
½ cup beef stock
Fresh lemon/lime juice
For the classic dressing
1 cup Clover Classic dairy snack, plain flavor
2 jalapenos, chopped
1 tsp ground cumin
Salt and pepper to taste
Pico da gallo for serving (tomato onion salsa)
Heat oil in a pan and sauté the onion until golden brown. Add in the beef mince and break up in the pan, using a wooden spoon.
Sprinkle over the taco seasoning and cook until the beef mince is browned, pour in the beef stock and cook for a few minutes.
Mix together the Clover Classic dairy snack, chopped jalapenos, ground cumin and season with salt and pepper. Cut the avos on half and drizzle over the lemon or lime juice. Season with salt and pepper. Add the beef mixture to the avos and drizzle over the classic dressing. Serve with Pico da gallo.
Chefs Tip:The creaminess pairs very well with the spicy flavours and you could use beans or other legumes instead of meat for this filling to make it meat free
