Le Creuset Basil Pesto Roast Chicken
Le Creuset cast iron is renowned for its excellent heat retention that locks in moisture and flavour.
Time: 85 minutes
1 whole chicken
125g basil pesto
6 small red onions, halved
2 tablespoons olive oil
300g cherry tomatoes
Preheat the oven to 190°C.
Place the whole chicken into a Le Creuset 29cm Signature Oval Casserole. Add the halved onions around the chicken and generously cover the chicken with basil pesto.
Cover with the casserole lid and place in the oven for 50 minutes. Remove from the oven and add tomatoes and feta and roast for 20 minutes without the lid.
Serve with roasted onions, tomatoes, and melty feta.
