Golden Cloud & Beacon S'mores Pizza

1 ¼ cup Golden Cloud Cake Flour
¼ tsp bicarbonate of soda
1 cup coconut biscuits, crumbed + ¼ cup
½ cup salted butter, room temp
¼ cup brown sugar
½ cup granulated sugar
Pinch of salt
1 tsp vanilla essence
1 cup Beacon Milk Chocolate, finely chopped + a few broken pieces from the slab
1 heaped cup Beacon white mallows
2 heaped cup Beacon coconut mallows
Preheat the oven to 180C and prepare a pizza pan.
In a medium bowl, whisk the flour, baking soda and coconut cookies. In a separate bowl, cream the butter, sugars and salt until light and fluffy. Add the egg and vanilla and whisk to combine. Fold in the dry ingredients and slowly mix until fully combined. Using your hands, press the dough firmly into the bottom of the pizza pan. Use a fork to pierce the dough all over. Bake until crust begins to brown and is baked through. Remove the crust from the oven and immediately sprinkle the chocolate, leaving a rim around the outside untouched. After 2-3 minutes, the chocolate chips will have melted enough for you to be able to use a spoon to spread it out until smooth. Sprinkle the remaining coconut biscuits, add the marshmallows, followed by the remaining chocolate chips. Place under the grill on high, for 1-3 minutes, watching carefully so that the marshmallows don’t burn. Remove from the oven. Slice and serve.
