1 pack roast veg mix, cut into smaller chunks 1 cup tomato passata or a tin of cherry tomatoes ½ cup Clover Classic mayo 2 cups mozzarella cheese, grated Garnish: Red onion, sliced, basil leaves, halved cherry tomatoes
Method:
Preheat the oven to 180c Grease and line a baking sheet. Add the veggie mix to the sheet and drizzle over olive oil. Season with salt and pepper and toss together. Roast for 20 minutes. Once roasted, discard any excess liquid. Drizzle the passata over the veggies, following by the Clover Classic Mayo. Top with red onion, tomatoes and basil leaves and scatter over the mozzarella.
Bake for 15-20 minutes and garnish with more basil. Serve warm
