Clover Classic Chicken Mayo French Toast
Two classics combined to take your sandwich game to the next level!

2 rotiserrie chicken breasts, shredded
2 spring onions, chopped
1 tsp garlic powder
1 cup Clover Classic Mayo, 1
1 tbsp sweet chilli sauce
For the French Toast
3 slices white bread
2 eggs, beaten
½ cup milk
2 knobs of butter
Sauce for serving
Handful chopped parsley for serving
Preheat the oven to 180C
To make the chicken mayo, place the shredded chicken, spring onions, garlic powder, Clover Classic mayo and sweet chilli sauce in a bowl. Mix to combine. Place a layer of chicken mayo onto a bread slice, top with another bread slice and add another layer of chicken mayo. Close the sandwich with the third slice of bread.
Press down the edges of the bread to keep the filling in. Beat the eggs and milk together and dip the chicken mayo sandwich into the beaten eggs. Allow to soak for a few seconds.
Melt the butter and fry off the French toast on a low heat.
Once browned on one side, flip over and brown for few minutes, then place into the oven to cook for a few more minutes. Serve with sauce and a garnish of parsley
Chefs Tip: You can also use the medium or strong Clover Classic mayos to suit your taste.
