Clover Sip Up Beetroot and Chocolate Cupcakes
Lover of chocolate but you can change it up into a healthy dessert with a veg.

1½tsps baking powder
60g cocoa powder
170g castor sugar
170g cooked beetroot
40ml Clover Sip up, Chocolate flavour
100ml vegetable oil
1tsp vanilla essence
For the icing
200g cream cheese
100g butter softened
250g icing sugar
1 tsp vanilla essence
Preheat the oven to 180C
In a large mixing bowl, combine the flour, baking powder, cocoa powder and castor sugar. Add the beetroot, eggs, Sip Up and oil to a blender and blend until smooth.
Pour into the dry ingredients and mix until just combined
Scoop the batter into prepared muffin tin lined with paper cup cases. Bake for 25-30 minutes, depending on size of muffin tray.
Allow to cool. Prepare the icing by beating the ingredients together and scoop into a piping bag. Ice cupcakes as desired
Chefs Tip: Save yourself sometimes and use ready cooked beetroot you can find in retail stores.
