Belgian Liege Waffles

INGREDIENTS
2 cups flour
4g dry yeast
¼ cup sugar
¼ tsp salt
1 cup milk
1/3 water
2 eggs
1 tsp vanilla essence
1 tbsp oil
90g butter (melted and warm)
¾ cup pearl sugar

 
METHOD
In a large bowl, mix together your flour, yeast, sugar, and salt. 
Whisk in your eggs, vanilla, milk and water.
Add the warm melted butter and mix well making sure everything is well combined.
Transfer this mixture into a plastic container to rise, ensuring that it is kept at room temperature.
Cover with plastic and poke a hole into it to allow in oxygen as this assist with the fermentation.
Let the mixture rest for at least 3 hours.
Only add the pearl sugar to already risen batter, mix thoroughly and rest for another 15 min.
Cook the waffles in a greased, pre-heated waffle machine for about 3 minutes
Serve warm with powdered sugar with your favourite topping.
