Cheesy bacon and egg waffle

Cheesy bacon and egg waffle

 
Recipe by Anél Potgieter
(Serves 6)
100 g butter, melted
3 large eggs
1 ½ cups full cream milk
2 cups flour
2 t baking powder
½ cup grated cheddar cheese
½ cup of chopped cooked bacon

To serve:
Butter for spreading over warm waffles
soft baked eggs 
Extra fried bacon 
If you want to be naughty add a touch of maple syrup

Beat together the melted butter, eggs and milk really well.
Sift together the flour, baking powder. Add the cheese and bacon to the sifted dry ingredients and toss through with your fingers. Add dry ingredients to the egg mixture.
Mix until all the ingredients are well combined. Allow to stand for at least ½ an hour or overnight in the fridge.
Heat waffle iron and spray lightly with a non-stick spray. Using a ladle, spoon and level mixture onto waffle iron.
Close the lid and cook until nicely browned. Serve warm with butter,s oft baked eggs, crispy bacon and a dash of maple syrup.
