Grilled Broccoli with Mushrooms and Halloumi

Ingredients:
2 small heads broccoli, sliced into steaks
3 Tbsp olive oil
2 large brown mushrooms, thickly sliced
6 sprigs fresh sage or thyme leaves
200g halloumi, sliced (or firm tofu)
1 Tbsp melted coconut oil
1 Tbsp dried oregano
salt and pepper
80g raw almonds, chopped (optional)
1 fresh red chilli, finely chopped (optional)
 
Leeks:
1 Tbsp coconut oil
2 leeks, sliced
1 Tbsp maple syrup
½ - 1 Tbsp cayenne pepper
1 Tbsp apple cider vinegar
 
Cooking instructions:
Bring a griddle pan to a medium to high heat. Lay the broccoli steaks and mushrooms flat on a plate and lightly coat with the olive oil. Pop the broccoli steaks into the griddle pan and grill on each side for 5 minutes. For the last 3 minutes of cooking add 2 tablespoons water to the griddle pan and pop a lid on it. This allows the broccoli to steam gently while getting all the grill flavour. Once the steaks are ready, place them on the serving dish. Next, grill the mushrooms by popping them into the griddle pan and allowing them to cook for roughly 2–3 minutes on each side. Make sure the mushrooms are cooked through (taste them to make sure). Once ready, add them to the serving dish, along with the sage or thyme. At the same time in a separate frying pan, fry the halloumi in the coconut oil until it is golden brown on each side, roughly 2 minutes per side. Season with oregano, salt and pepper. Once ready, top the mushrooms and broccoli with the cheese.   For the leeks, heat the coconut oil in a medium-sized frying pan over medium heat. Add the leeks and sauté them, stirring often, for 5 minutes. Add the maple syrup and cayenne pepper. Once the leeks are caramelised, after roughly 3 minutes, remove from the heat and add the apple cider vinegar. Stir until well combined.  Cover the broccoli, mushrooms and halloumi with the leeks. Top off with the almonds (if using), a crack of black pepper and a sprinkling of chopped chilli if you are craving some heat!
