Nespresso Coffee Churros
Recipe by Kelly-Anne Damons
1 cup flour
2 eggs
80g butter
1 cup water
1 tsp vanilla essence
3 Tbsp sugar
2 Tbsp sugar and ½ tsp cinnamon powder for dusting
pinch of salt
oil for frying
For the sauce:
1 Nespresso Buenos Aires lungo
100g milk chocolate
2-3 Tbsp icing sugar
Cooking method:
Place the water and butter in a saucepan over medium heat. Allow the butter to melt once melted, add in vanilla essence, stir in flour and salt mix, with a wooden spoon until the flour is well incorporated and until the mixture begins to pull away from the sides of the saucepan. Remove from the sauce pan and place in a bowl, allow the mixture to cool slightly. Add in eggs and whisk well. If the mixture is too runny add in some more flour. Heat the oil in a separate pot. Place the mixture in a star tipped nozzle piping bag and pipe into the hot oil, using a scissor to cut and form the Churros.
Fry for -+ 2-3 minutes or until golden. Dust with cinnamon sugar and drizzle with chocolate sauce.

For the sauce:
Melt the chocolate over a double bowler, add in sieved icing sugar, whisk and add in the shot of Nespresso.  Mix well to combine.
