Nespresso pancakes with coffee sauce
Nespresso pancakes with coffee sauce

2 medium eggs
2 bananas, peeled
½ Cup oats
50-70 ml water
¼ tsp baking powder
pinch of salt
Coffee sauce:
½ Cup sugar
¼ Cup water
¼ Cup cream
80ml Nespresso Kahawa Ya Congo coffee (2 x espresso)

Place all the pancake ingredients into a blender and blend until smooth. Add more water if the batter is too thick.
Bring a non-stick pan to a medium heat. Pour about ¼ cup of batter into the pan and cook for 3-4 minutes, once the batter starts to get bubbles on the top it is time to flip it over to cook on the other side for 3-4 minutes. Once the pancake is cooked, repeat the process until all the batter has been cooked off.
Serve the pancakes with the coffee sauce.

To make the coffee sauce, add the cream, water and sugar to a saucepot. Bring to a simmer and allow the sauce to cook for 10-15 minutes, allowing it to reduce and thicken. Once the sauce has thickened, prepare 2 Nespresso Kahawa Ya Congo espressos and add them to the sauce. Stir the sauce to combine the coffee and pour the sauce over the pancakes to serve.
