Stuffed Cabbage Rolls

Stuffed Cabbage Rolls 
Recipe by Clement Pedro
500g Woolies beef mince
1 onion, grated
salt and freshly ground black pepper
10g roughly chopped mint
10g parsley
2 Tbsp Woolies BBQ rub
1 cabbage, leaves removed
1 x 400g can Woolies tomato and chipotle soup
Cooking instructions:
In a large mixing bowl add the mince, onion, salt and pepper mint, parsley and the rub, mixing well to combine.
In a pot of salted boiling water, blanch the cabbage leaves until tender enough to be stuffed. Set aside to cool.
Place about 2T-3T of the mince filling in each cabbage leaf and rolling up, securing the side so the filling doesn’t escape. Tightly pack the rolls in an oven proof dish before pouring over the tomato soup.
In an oven preheated to 180C, add the dish and cook for 35 minutes or until the soup has reduced slightly and the top is slightly charred.
