B-well Spicy Teriyaki Tofu Burger

This meat-free burger is an absolute banger! It promises not only on taste, but also on texture with sesame crusted tofu tossed in a spicy teriyaki glaze and layered over charred pineapple with vegan chillinaise slaw. This burger will convert even the most avid meat eaters!

Ingredients:

1 cup B-well Chillinaise Mayonnaise
2 cups rainbow slaw
2 spring onions, sliced
3 tbsp cornflour
1 large egg
6 tbsp mixed sesame seeds
350g block extra- firm tofu
½ cup teriyaki sauce
1 birds eye chilli, finely chopped
4 burger buns, halved and toasted
4 thick slices of fresh pineapple
B-well Canola Cooking Oil

Method:

In a bowl, combine the mayonnaise, slaw and spring onions and mix well. Add more mayo if needed. Wrap the bowl and set side in the fridge.
Place the cornflour, egg and sesame seeds into 3 separate bowls.
Cut the tofu into 4 equal slices and pat dry with paper towel. Evenly coat each slice in the cornflour, followed but the egg and finishing off with the sesame seeds.
Heat a large pan and drizzle oil. Add the pineapple and cook until browned and beginning to char on both sides. Remove from the pan and set aside.
Clean the pan and return to the stove. Add a drizzle of oil and cook the tofu slices until golden and crisp on both sides. Transfer the tofu to a plate.
Add the teriyaki sauce to the same pan, followed by the chilli and allow to simmer for 2-3 minutes or until slightly thickened.
Add the tofu back into the pan and baste in the sauce.
To assemble; place the pineapple slices on each of the bottom buns, followed by the tofu, and extra sauce spooned over. Top with a generous amount of slaw and finish off with the top bun. Serve and enjoy!
 

Chefs Tip: For more protein intense diets, you can replace the tofu with chicken breast making a teriyaki chicken burger.
