Parmesan Baked Cauliflower

Cauliflower baked parmesan is a great way to change things up in the kitchen and also eat a delicious plant-based meal that heros a hearty vegetable, crumbed to perfection and finished off with cheesy heaven.

Ingredients:

1 head of cauliflower, cut into steaks
½ cup almond flour
½ hard grated cheese
2 tbsp Italian seasoning
1 tsp garlic powder
1 tsp smoked paprika
Salt
Pepper
1 egg

Sauce:
2 tbsp tomato paste
½ cup water
1 tsp Italian seasoning
1 cup shredded mozzarella

Fresh parsley

Method:

Preheat the oven to 180C. Prepare a baking sheet with parchment
In a plate combine the flour, cheese, Italian seasoning, garlic powder, paprika, salt and pepper. Set aside.
Whisk together an egg with a pinch of salt and pepper.
Dip the cauliflower slices into the egg on both sides. Then transfer to the flour cheese mixture. Make sure it is coated on both sides. Place it on a parchment paper prepared baking.
Bake for 15 minutes. While its baking, mix your sauce ingredients until fully combined. Take the cauliflower out of the oven and add sauce and mozzarella cheese. Place bake in the oven for 15 more minutes. Top it off with parsley and enjoy!

Chefs Tip: You can also make this recipe in an air fryer, follow the same steps and cook in an air fryer for 10 minutes.
