1 pack coconut biscuits 3 cups Clover Classic Custard 2 tbsp corn flour ½ cup caramel, softened, for topping
Method:
Place a layer of biscuits at the bottom of a greased and line dish. Mix ½ cup of the Clover Classic custard with the corn flour in a small bowl. Add the rest of the custard to a small saucepan as well as the corn flour mixture. Heat gently whilst stirring to prevent burning. Once thickened, remove from heat and allow to cool slightly. Warm the caramel so that it has a pouring consistency. Pour the custard mixture over the biscuit base, and pour a layer of caramel on top. Add a layer of biscuits and place into the fridge to set. Slice when ready to serve.
