Clover Classic Jollof Rice

Nothing is better than  a homemade traditional West Africa Jollof  Rice.

1 red bell pepper, roughly chopped
2 roma tomatoes, halved
1 red onion, roughly chopped
2 habanero chillies, roughly chopped
2 tbsp Clover Classic Fat spread
1 onion, thinly sliced
2 cloves garlic, chopped
2 tbsp tomato paste
2 tsp curry powder
1 tbsp dried thyme
2 bay leaves
2 cups chicken or veg stock
Salt and pepper to taste
2-3 cups basmati rice, soaked and rinsed


Combine the red bell pepper, tomatoes, red onion and habanero chillies in a blender and blend until slightly smooth. Set aside

Melt the Classic fat spread in a large pot and add in the sliced onion. Saute for a few minutes, then add in the garlic, the spicy red bell pepper mixture and tomato paste. Cook for a few minutes then season with the curry powder, thyme and bay leaves. Stir through the rinsed riced and mix until combined. Season with salt and pepper and cover with stock. Cook on a low heat until the rice is tender and serve with meat as desired.

Chefs Tip: You can add crayfish seasoning for extra flavour to ths jollof rice. Its best enjoyed with cooked meat and plantain.
