Clover Crispy Feta with Lemon Chicken & Rice

Ingredients:

X4 chicken thighs
2 tbsp olive oil
2 tsp smoked paprika
1 tsp cumin seeds/ground cumin
Salt and lemon pepper to taste
1 onion, sliced
2 bell peppers, sliced
2 cloves garlic, chopped
Squeeze of fresh lemon
3 Clover Feta cheese discs, Herb flavor
3/4 cup mixed fresh herbs, chopped
¼ cup corn flour
2 cups jasmine rice, cooked

For the dressing
2 tbsp fresh lemon juice
2 tbsp olive oil
1 tsp honey

Method:

Heat oil in a a large saucepan and saute the onions and bell pepper. Once browned, add in the chicken and season with the spices. Give it a good mix and allow to cook for a few minutes so that the spices become fragrant. Add a cup of water or stock and allow to simmer until the chichen is cooked through.

Toss the feta discs with the cornflour. Heat oil in a pan and fry until crispy on all sides. Alternatively, drizzle with oil and place into an airfryer at 200C, until golden brown and crispy.

Once the chicken is cooked, mix the rice with fresh herbs, onion and pepper mix and the dressing. Add the chicken and feta and a final drizzle of the dressing to serve.

Chefs Tip:You can use any of your favourite Clover Elite Feta cheese flavours in this recipe – like the black pepper flavour will bring a subtle kick to the dish
