Clover Elite Cheese, Potato and Onion Galette
Cheese, potato and caramelized onion galette is easier to make than you think!

For the caramelised onion
3 tbsp oil
2 tbsp brown sugar
3 onions thinly sliced
Salt and pepper to taste
2-3 large potatoes thinly sliced
6 springs Fresh thyme leaves
2garlic cloves chopped
8-10 Clover Elite cheddar cheese slices
1/4 cup parmesan
Zest of 1 lemon optional
Salt and pepper
1 roll short crust pastry
Pre heat your oven to 180°C
Make your caramelised onion by placing your onions and oil in a pot and saute until caramelised over a low heat, stirring frequently to prevent burning. After cooking for 15 minutes add in your sugar, season to taste and cook for a further 5 minutes. Your onions should be golden in colour.
Roll out the pastry to a large circular shape and place the pastry on a lined baking sheet. To the middle of the pastry add half your onions, spread out evenly,1/2 the chopped garlic, a sprinkle of thyme leaves, 1/2 the cheddar cheese slices and half of the thinly sliced potato while leaving a border along the pastry. Repeat the layering with the rest of the onion, garlic, thyme, cheese slices and potato. Brush the potato with melted butter some thyme leaves, lemon zest and a sprinkling of parmesan. Fold the border inwards and bake in the oven for 50 minutes.
Chefs Tip: For a quicker cooking time, pop it into an airfryer.
