Clover Elite Feta and Aubergine meatballs
If you are looking to try out more plant based meals, then you’re going to love feta and aubergine meatballs, with all this flavour and taste, you wont even miss the meat.
Serves: 2-4

Ingredients:
2 Large aubergines chopped
½ cup of bread crumbs
1 egg
½ cup parmesan
2 cloves of garlic
½ onion finely diced
½tsp red chilli flakes
2 blocks of Clover Elite feta cheese roughly crumbled
A handful of parsley chopped
Salt and pepper to taste
Olive oil for drizzling and frying
1 jar tomato passata
A handful fresh basil
½ cup parmesan cheese grated
Parsley for garnishing
Method:
Drizzle the aubergine and garlic with olive oil, season with salt, pepper and roast for 20-25 minutes. Place the roasted aubergine and garlic in a food processor, along with the rest of the ingredients and pulse until well combined. Shape into balls and fry in olive oil until browned and remove from the heat. Roughly chop the basil and stir it through the passata. Place the browned balls into a oven proof dish and pour over the passata, sprinkle with parmesan and bake for 15 minutes. Garnish with fresh parsley and enjoy
Chefs Tip: For a meaty option, you can add beef or chicken mince to the recipe.
