Clover Krush Takeout Style Cashew Chicken

Like takeaway food, but make it better!

4 boneless chicken thighs, cut into pieces
2 cloves garlic, chopped
1 tbsp grated ginger
2 spring onions, chopped
1 cup unsalted raw cashew nuts, toasted
¼ cup Krush Carrot and Orange juice
2 tsp corn flour
4 tbsp hoisin sauce
1 tbsp soy sauce
2 tbsp rice vinegar
1 tsp sesame oil
2 tsp honey
Sesame seeds for garnish

Rice for serving


Heat a glug of oil in a large saucepan. Add the chicken to the pan and fry until browned. Stir in half of the spring onions, garlic and ginger and cook for a few minutes.
In a small bowl, whisk together the Krush juice, corn flour, hoisin sauce, soy sauce, rice vinegar, sesame oil and honey. Pour over the chicken, tossing, until the chicken is cooked through. Stir in the rest of the cashew nuts. Cook until the chicken is cooked through. Add a dash of water if the mixture is too thick.

Serve with rice and garnish with sesame seeds, cashew nuts and reserved spring onions.

Chefs Tip: Swop out the chicken for Tofu, if you looking to have a plant-based version of this takeout style meal
