Creamy Baked Prawn Dip

Ingredients:
- 500g prawns, deveined, shells removed & cooked
- 1 cup cream cheese, softened
- 1/2 cup Clover Cream
- 1/2 cup mayonnaise
- 1/2 cup grated Parmesan cheese
- 1/2 cup grated mozzarella cheese (plus extra for topping)
- 2 garlic cloves, minced
- 1/4 cup spring onions, finely chopped (reserve some for garnish)
- 1 tsp smoked paprika
- 1 tsp lemon juice
- 1/2 tsp chili flakes (optional)
- Salt and pepper, to taste
To serve:
- Parsley
- Crusty bread
How To Make Creamy Baked Prawn Dip
- Preheat oven to 180°C. Grease a small baking dish or oven-safe skillet. In a medium bowl, combine the cream cheese, Clover cream, mayonnaise, parmesan cheese, garlic, smoked paprika, lemon juice, salt, and pepper. Mix until smooth. Add the prawns and spring onions to the creamy mixture. Stir to combine. Pour the mixture into the prepared baking dish. Sprinkle mozzarella cheese generously over the top. Place the dish in the oven and bake for 20–25 minutes, or until the top is golden and bubbly. Remove from the oven, and garnish with parsley, spring onions, and a sprinkle of chili flakes if desired. Serve warm with crusty bread.
