Creamy Tomato Soup with Crispy Prosciutto & Croutons

Ingredients:
- 2 Tbsp olive oil
- 1 onion, chopped
- 1 Tbsp fresh crushed garlic
- 1 ½ tsp mixed herbs
- 1 × WW 600g Fresh Tomato Soup
- ½ cup double thick cream
- 4 basil leaves
- salt & pepper, to taste
- 200g Prosciutto crudo
- To serve:
- 180g garlic & herb croutons
- parmesan shavings
- basil leaves
- sundried tomatoes
How To Make Tomato Soup with Crispy Prosciutto and Croutons
- Preheat the oven to 180°C, grease a baking tray, then place prosciutto crudo onto the tray and bake in the oven for a few minutes until crispy.
- Meanwhile, heat olive oil in a pot, add in onions and garlic, cook until the onions are translucent, then add in Fresh Tomato Soup, mixed herbs and allow to simmer on medium heat for 5 minutes until slightly reduced, then stir in cream and cook for another 3 minutes.
- Turn down the heat, add in fresh basil and season to taste with salt & pepper.
- Serve soup immediately, top with parmesan shavings, crispy prosciutto crudo, croutons, sundried tomatoes, and garnish with fresh basil.
