Creamy Tomato Soup with Crispy Prosciutto & Croutons

Ingredients:

  • 2 Tbsp olive oil
  • 1 onion, chopped
  • 1 Tbsp fresh crushed garlic
  • 1 ½ tsp mixed herbs
  • 1 × WW 600g Fresh Tomato Soup
  • ½ cup double thick cream
  • 4 basil leaves
  • salt & pepper, to taste
  • 200g Prosciutto crudo
  • To serve:
  • 180g garlic & herb croutons
  • parmesan shavings
  • basil leaves
  • sundried tomatoes

How To Make Tomato Soup with Crispy Prosciutto and Croutons

  1. Preheat the oven to 180°C, grease a baking tray, then place prosciutto crudo onto the tray and bake in the oven for a few minutes until crispy.
  2. Meanwhile, heat olive oil in a pot, add in onions and garlic, cook until the onions are translucent, then add in Fresh Tomato Soup, mixed herbs and allow to simmer on medium heat for 5 minutes until slightly reduced, then stir in cream and cook for another 3 minutes.
  3. Turn down the heat, add in fresh basil and season to taste with salt & pepper.
  4. Serve soup immediately, top with parmesan shavings, crispy prosciutto crudo, croutons, sundried tomatoes, and garnish with fresh basil.
