Fillet Steak with Exotic Mushroom Sauce

Ingredients:

  • 200g Fillet steak
  • Bulb fresh garlic
  • 4 stalks Fresh thyme
  • 4 stalks Fresh rosemary
  • Punnet of mixed exotic mushrooms
  • 2 shallots
  • Liquid chicken stock 250ml
  • 250g salted butter
  • Salt
  • Black pepper
  • Italian parsley
  • Olive oil
  • Petite leaf salad for garnish

How To Make Fillet Steak with Exotic Mushroom Sauce

  1. For the steak: Pat dry steak with paper towel and salt. Heat cast iron pan until smoking and seal steak occasionally turning for an even crust for about of 5 minutes for medium rare. Add butter 4 and cloves of garlic with thyme and rosemary and baste, remove and set aside.
  2. For the sauce: Slice mushrooms and add to hot non-stick pan and dry fry till mushrooms start to sweat and brown. Add olive oil and 100g butter melt and add diced shallots and garlic and sauté till garlic and shallots are soft. Add chicken stock to deglaze and reduce and then add cream. Reduce and add chopped parsley and add salt and pepper to taste.
  3. To plate: Spoon mushroom sauce onto plate and with the back of the spoon spread in a circular motion.
    Place fillet steak on top of sauce and garnish with petite leaf salad.
