Garlic Herb Butter Prawn Spaghetti with Parmesan
This dish combines succulent prawns, a creamy butter sauce, and perfectly cooked spaghetti for a meal that’s sure to impress!
Ingredients:
- 500g spaghetti or long pasta
- 125g Clover Mooi River Premium Butter, cubed
- 6 cloves garlic, peeled and finely chopped
- 500g peeled large raw prawns/shrimp
- 1 cup pasta cooking water
- 1 teaspoon chicken stock powder
- 2 lemons, halved
- 1/4 cup finely chopped parsley
- 1/2 cup grated Parmesan cheese
- Salt and pepper
How To Make Garlic Herb Butter Prawn Spaghetti with Parmesan
Bring a large pot of salted water to a boil. Cook the spaghetti or long pasta, according to package instructions until al dente. Reserve 1 cup of pasta cooking water before draining.
In a pan, heat half of the butter on medium heat. Once the butter has melted, add garlic and sauté until the garlic infusion in the butter. Add the prawns and cook until nice pink in color. Remove from the pan and set aside. In the same pan, add the remaining butter followed by the chicken stock. Stir in the chicken stock powder and squeeze the juice of 1 lemon into the butter. Cook for 1-2 minutes until the sauce is slightly thickened and emulsified. Add the cooked pasta to the with the garlic butter sauce. Stir in the Parmesan cheese until melted and smooth. Toss well to coat the pasta evenly. Gradually add the reserved pasta cooking water, a little at a time, tossing continuously, until the sauce reaches your desired consistency.
Garnish with additional parmesan cheese and fresh herbs if desired. Serve immediately and enjoy!
