
Ginger Cookies and Warm Honey Ginger Milk

Ingredients:
- For the cookies;
- 2 cups flour
- Pinch of salt
- 2 tsp bicarbonate of soda
- 2 tsp ground cinnamon
- 1 tsp ground ginger
- ¾ cup butter
- 1 cup brown sugar
- 1 egg
- ¼ cup golden syrup
- 1/3 cup granulated sugar
- For the warm milk;
- 2 cups Parmalat Easygest Low Fat Milk
- 1cm fresh ginger
- ½ tsp turmeric
- 1 tsp cinnamon
- 1 tbsp honey
How To Make Ginger Cookies and Warm Honey Ginger Milk
- Preheat the oven to 180°C and prepare 2 baking sheets
- For the cookies, combine the flour, salt, bicarb, cinnamon and ginger.
- Mix well and set aside.
- In a large bowl using an electric whisk, cream together the butter and brown sugar until light and fluffy.
- Add the egg and golden syrup and whisk until just combined.
- Gradually add the flour mixture until fully incorporated.
- Wrap with plastic wrap and refrigerate for 30 minutes
- Scoop a tablespoon of the dough into your hands and roll into a ball.
- Roll the ball in the granulated sugar then place on the baking sheet.
- Repeat this process until the dough is finished.
- Bake for 10-12 minutes.
- Remove from the oven and allow to cool on the tray.
- In the meantime, make the warm milk by combining all the ingredients in a saucepan and bringing to a gentle simmer.
- Remove from the heat and allow to steep for 10 minutes.
- Strain through a sieve. Pour back into the saucepan to reheat.
- Pour into your cups and enjoy with the ginger cookies!
