Ginger Cookies and Warm Honey Ginger Milk

  • For the cookies;
  • 2 cups flour
  • Pinch of salt
  • 2 tsp bicarbonate of soda
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • ¾ cup butter
  • 1 cup brown sugar
  • 1 egg
  • ¼ cup golden syrup
  • 1/3 cup granulated sugar
  • For the warm milk;
  • 2 cups Parmalat Easygest Low Fat Milk
  • 1cm fresh ginger
  • ½ tsp turmeric
  • 1 tsp cinnamon
  • 1 tbsp honey

How To Make Ginger Cookies and Warm Honey Ginger Milk​

  1. Preheat the oven to 180°C and prepare 2 baking sheets
  2. For the cookies, combine the flour, salt, bicarb, cinnamon and ginger.
  3. Mix well and set aside.
  4. In a large bowl using an electric whisk, cream together the butter and brown sugar until light and fluffy.
  5. Add the egg and golden syrup and whisk until just combined.
  6. Gradually add the flour mixture until fully incorporated.
  7. Wrap with plastic wrap and refrigerate for 30 minutes
  8. Scoop a tablespoon of the dough into your hands and roll into a ball.
  9. Roll the ball in the granulated sugar then place on the baking sheet.
  10. Repeat this process until the dough is finished.
  11. Bake for 10-12 minutes.
  12. Remove from the oven and allow to cool on the tray.
  13. In the meantime, make the warm milk by combining all the ingredients in a saucepan and bringing to a gentle simmer.
  14. Remove from the heat and allow to steep for 10 minutes.
  15. Strain through a sieve. Pour back into the saucepan to reheat.
  16. Pour into your cups and enjoy with the ginger cookies!
