Grilled Mushroom Kebabs

Smoky, juicy, meaty, and healthy veggie skewers braaied to perfection.

Ingredients:

200g King oyster mushrooms, halved lengthways
200g Shiitake mushrooms, halved
200g Button Mushrooms, halved
200g Portabellini Mushrooms, halved
3 tbsp Clover Classic Spread, melted
2 tbsp soy sauce
4 cloves garlic, minced
1 tbsp fresh thyme, chopped
1 tbsp fresh parsley, chopped
Salt and pepper
4-8 Bamboo skewers

Method:

In a large bowl, combine all the mushrooms, classic spread, soy sauce, garlic, fresh herbs and season with salt and pepper. Toss to evenly coat and allow to marinate for 10 minutes. In the meantime, soak the skewers in warm water.
Skewer the mushrooms, alternating the different mushrooms.
Place on the fire and braai until just tender and slightly charred, about 2-3 minutes on each side.
Transfer the grilled mushrooms onto a serving platter and top with fresh parsley.
Serve immediately.

Chefs Tip: Simply clean your mushrooms with a damp cloth instead of washing under water. Mushrooms are like sponges; they soak up a lot of moisture which can lead to sogginess.
