
Ostrich Fillet, Veggies & Cheesy Biltong Pap

Ingredients:

Cooking time: 15 – 20 minutes
For the steak:
- 2 – 4 Ostrich steaks
- 2 Tbsp olive oil
- Salt & pepper
For the vegetables:
- 350g baby potatoes with garlic & herb butter, prepared according to packet instructions
- 125g Tenderstem broccoli & carrot mix, prepared according to packet instructions
For the creamy spring onion & thyme sauce:
- 1 Tbsp olive oil
- 1 Tbsp butter
- 4 spring onions, finely chopped
- 1 tsp fresh thyme leaves
- 1 cup cream
- 2 Tbsp crispy onion sprinkles to top before serving
How To Make Ostrich Fillet with Crushed Baby Potatoes, Creamy Spring Onion & Thyme Sauce, and Seasonal Vegetables
- Prepare the baby potatoes, tender stem broccoli & carrot mix according to packet instructions.
- When potatoes are cooked, allow to slightly cool, crush and drizzle with oil before transferring into an air fryer basket.
- Heat for 10 – 12 minutes at 200 °c, until crispy.
- Heat a large pan, pat the ostrich steak dry using paper towel then brush both sides with olive oil, season with salt & pepper.
- Cook for about 3 minutes each side for a rare steak, remove from the pan and allow the steaks to rest before slicing.
- In the same pan, prepare the sauce by heating olive oil & butter, add in spring onions and cook for about 2 minutes until soft, then add in thyme, cook for another minute until fragrant.
- Stir in cream and allow the sauce simmer until slightly thickened.
- Place the crispy crushed potatoes onto serving plates, along with the ostrich steaks.
- Serve with a generous amount of sauce and tenderstem & carrot vegetables.
- Top the sauce with crispy onion sprinkles.

- 4 cups water
- 1Tbsp butter
- ½1 tsp salt
- 2 cups maize meal
- 1 cup ostrich biltong
- 1 cup grated cheddar cheese
- Optional: a pinch of black pepper or paprika for extra flavour
How To Make Cheesy Biltong Pap
- In a pot, bring the water, butter and salt to a boil.
- Gradually add the maize meal to the boiling water while stirring continuously to avoid lumps.
- Reduce the heat to low and cover the pot.
- Let the pap cook for about 10-15 minutes, stirring occasionally until thickened and cooked through.
- Once the pap is fully cooked, layer an oven proof dish with pap, top with biltong and another layer of pap.
- Finish off with the grated cheese and pop into a heated oven for 10 – 15 minutes until the cheese has melted.
- Allow to rest and slightly cool before serving.
