Phyllo Fruit Mince Pies
Nothing says festive like a tray of warm, spiced mince pies and we’re giving them a light and modern twist with flaky phyllo pastry and buttery layers that will have everyone reaching for seconds!

Ingredients:
- 500g dried mixed fruit
- 1 cup muscovado sugar
- 1 lemon grated juiced
- 1 orange grated juiced
- 1 tsp mixed spice
- 1/4 tsp nutmeg
- 75 g butter melted
- 1/2 cup brandy essence
- 1/2 cup almond flakes
- 1/4 cup milk
- 1/4 cup icing sugar for dusting
- 1 roll Phyllo pastry
- Clover Butro Non-stick Cooking Spray
How To Make Phyllo Fruit Mince Pies
- For the fruit mince, coarsely chop dried fruit and transfer to a heat-proof dish.
- Stir in sugar, lemon zest and juice, spices, melted butter, and brandy essence.
- Cover and microwave on high for 4 minutes, stirring every minute.
- Chop almonds coarsely in a food processor and stir into fruit mixture.
- Cut the Phyllo pastry in squares and place in a muffin tray, sprayed with Clover Butro Non-Stick Cooking Spray.
- Scoop the fruit mince filling in the centre of the pastry, repeat the pastry steps.
- Bake for 15-20 minutes or until lightly browned. Sprinkle with icing sugar to serve.
