Roasted Garlic & Potato Salad

Ingredients:

  • 500g baby potatoes, halved & parboiled
  • 1 – 2 Tbsp olive oil
  • Salt & pepper
  • 1 garlic bulb
  • 1 ½ cups mayonnaise
  • ¼ cup sweet chili sauce
  • 2 Tbsp condensed milk
  • Salt & pepper, to taste

To serve:

  • Spring onion or fresh parsley, chopped

How To Make Roasted Garlic & Potato Salad

  1. Preheat oven to 200°C.
  2. Cut the garlic bulb in half, line a baking ramekin with foil then place the halved garlic bulbs into the lined ramekin, drizzle with olive oil and place into the oven to roast for 1 hour.
  3. In a large mixing bowl, add parboiled potatoes, olive oil and season with salt & pepper, place into the air fryer and roast for 12 – 15 minutes until golden brown and crispy.
  4. In a separate bowl, combine mayonnaise, sweet chili sauce and condensed milk until well combined, then squeeze in the roasted garlic, add in crispy potatoes and toss to combine, season to taste if necessary.
  5. Serve immediately and garnish with freshly chopped spring onion or parsley.
