Savoury Samp Casserole

Nothing like a home-cooked meal and you can’t beat an ACE taste!

Time: 1 hour 20 minutes

Ingredients:

  • 2 cups ACE Quick Cook Samp
  • 2 cups water
  • 1 tsp salt
  • 2 Tbsp oil
  • 1 onion, finely diced
  • 2 cloves garlic, chopped
  • 2 sprigs fresh thyme, chopped
  • 1 cup bacon, chopped
  • 1 cup mushrooms, sliced
  • 1 cup cream
  • 1 cup cheddar cheese, grated
  • salt & pepper to taste

How To Make 

  1. Start by preparing the samp, add Ace Quick Cook samp, water and salt to a large pot, cover with a lid and allow it to boil for about 5 minutes.
  2. Once it starts boiling place the lid at an angle, reduce the heat and simmer for 25-30 minutes. Strain excess liquid, season to taste with salt if necessary and allow it to cool down.
  3. Heat oil in a large non-stick pan, add bacon and cook until the bacon is crispy, remove bacon from the pan, then add the onions and garlic to the same pan, allow this to cook until the onions are translucent.
  4. Add in mushrooms, fresh thyme and season to taste. Once the mushrooms are cooked through, reduce the heat and add in cream allow this to simmer until the cream is thickened.
  5. Combine the mixture with cooled samp, transfer to a baking dish, top with cheese and bake for 10 minutes.
  6. Once baked remove from the oven and serve immediately.
  7. Combine this mixture with the cooked samp. Cover and keep warm until ready to serve.
