Summer Salads

Perfect for a hot summers day, try this Tropical Couscous Salad  or a Spinach and Berry Salad

Preparation times: 15 minutes

Ingredients:

  • 1 cup couscous,
  • 1 cup boiling water
  • 1 cup diced mango
  • 1 cup diced pineapple
  • 1 red bell pepper, diced
  • ½ cup red onion, finely chopped
  • ½ cup black beans, rinsed and drained
  • ¼ cup fresh parsley, chopped
  • ¼ cup sliced almonds or cashews (optional)
    For the dressing:
  • 3 Tbsp olive oil
  • 2 tablespoons lime juice
  • 1 tablespoon honey or golden syrup
  • Salt and pepper, to taste

How To Make A Tropical Couscous Salad

  1. In a bowl, combine couscous and boiling water. Cover and let it sit for about 5 minutes. 
  2. Fluff with a fork once done.
  3. In a large bowl, combine the fluffed couscous, mango, pineapple, red bell pepper, red onion, black beans, and chopped parsley. In a separate small bowl, whisk together olive oil, lime juice, honey, salt, and pepper. 
  4. Pour the dressing over the salad and toss gently to combine. 
  5. Adjust seasoning as needed. Garnish with sliced almonds or cashews if desired. 
  6. Serve chilled or at room temperature.

Ingredients:

 

  • 200g baby spinach, rinsed
  • 1 ½ cups strawberries, sliced 
  • 1 cup blueberries 
  • ½ cucumber, thinly sliced 
  • ½ cup nuts of yur choice, toasted & chopped
  • 2-disc feta cheese, crumbled 

For the dressing: 

  • 1 Tbsp balsamic vinegar 
  • 3 Tbsp olive oil 
  • 1 tsp honey 
  • Salt & pepper, to taste

How To Make A Summer Salad

  1. Start by placing baby spinach in a large platter or bowl, then top with berries, cucumber, nuts and feta. 
  2. Add all the ingredients for the dressing into a bowl and whisk until well combined, drizzle the dressing over the salad and serve immediately.
