Summer Salads
Perfect for a hot summers day, try this Tropical Couscous Salad or a Spinach and Berry Salad

Preparation times: 15 minutes
Ingredients:
- 1 cup couscous,
- 1 cup boiling water
- 1 cup diced mango
- 1 cup diced pineapple
- 1 red bell pepper, diced
- ½ cup red onion, finely chopped
- ½ cup black beans, rinsed and drained
- ¼ cup fresh parsley, chopped
- ¼ cup sliced almonds or cashews (optional)
For the dressing: - 3 Tbsp olive oil
- 2 tablespoons lime juice
- 1 tablespoon honey or golden syrup
- Salt and pepper, to taste
How To Make A Tropical Couscous Salad
- In a bowl, combine couscous and boiling water. Cover and let it sit for about 5 minutes.
- Fluff with a fork once done.
- In a large bowl, combine the fluffed couscous, mango, pineapple, red bell pepper, red onion, black beans, and chopped parsley. In a separate small bowl, whisk together olive oil, lime juice, honey, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Adjust seasoning as needed. Garnish with sliced almonds or cashews if desired.
- Serve chilled or at room temperature.
Ingredients:
- 200g baby spinach, rinsed
- 1 ½ cups strawberries, sliced
- 1 cup blueberries
- ½ cucumber, thinly sliced
- ½ cup nuts of yur choice, toasted & chopped
- 2-disc feta cheese, crumbled
For the dressing:
- 1 Tbsp balsamic vinegar
- 3 Tbsp olive oil
- 1 tsp honey
- Salt & pepper, to taste
How To Make A Summer Salad
- Start by placing baby spinach in a large platter or bowl, then top with berries, cucumber, nuts and feta.
- Add all the ingredients for the dressing into a bowl and whisk until well combined, drizzle the dressing over the salad and serve immediately.
