These 5-Ingredient lemon swirl squares are a quick and refreshing no-bake treat, perfect for when you’re craving something zesty but don’t want to spend hours in the kitchen!

Ingredients:

  • 1 packet coconut biscuits, crushed
  • ¼ cup butter, melted
  • ½ tin sweetened condensed milk
  • 1 tub plain cream cheese, softened
  • 1 cup store-bought lemon curd

How To Make 5 Ingredient No-Bake Lemon Swirl Squares

  1. Start by lining a square baking tin with baking paper and set aside, then place biscuits and melted butter into a bowl and mix until well combined.
  2. Press the mixture firmly into the bottom of an 8×8-inch baking tin to create the base.
  3. Set aside in the fridge to chill.
  4. In a separate bowl, beat the softened cream cheese until smooth and creamy.
  5. Add in the sweetened condensed milk and continue beating until the mixture is smooth and well-combined.
  6. It should be silky without lumps, then fold in ½ cup of store-bought lemon curd. Pour the mixture over the prepared biscuit crust, Dollop the remaining lemon curd on top of the mixture in small spoonsful, then use a toothpick to swirl the lemon curd into the filling, creating a marble pattern.
  7. Place in the refrigerator and let it chill for at least 4 hours or until fully set.
  8. Once set, cut into even squares, garnish with lemon zest and enjoy!

Chefs Tip:

  • Before adding the filling, allow the biscuit base to chill in the refrigerator for at least 15-20 minutes. This helps the butter solidify, creating a firmer base that holds its shape better when slicing the squares, preventing it from crumbling.
  • Ensure that the cream cheese is softened and at room temperature before mixing with the sweetened condensed milk. This prevents lumps and gives you a smooth, creamy filling. If the cream cheese is too cold, it will create a grainy texture in the squares.
  • If you like a stronger lemon flavour, you can add an extra tablespoon of lemon curd or a splash of fresh lemon juice to the filling mixture.
  • When swirling the lemon curd into the cream cheese filling, use a toothpick or butter knife. Avoid over-mixing to maintain the marble pattern. Swirl just enough to create a contrast between the lemon curd and the creamy filling.
