Butter Chicken Pasta

Ingredients:

Marinade:

  • 2 Large chicken breast diced
  • 2 level tsp cumin powder
  • 1 level tsp turmeric powder
  • 1 tsp coriander powder
  • 1/4 tsp garam masala
  • 1/2 tsp curry powder
  • 1/4 tsp salt
  • 1/2 cup plain double cream yogurt
  • Mix all the above ingredients in a bowl and set aside

For the sauce:

  • 1 heaped tsp cumin powder
  • 1 level tsp turmeric powder
  • 1 tsp coriander powder
  • 1/4 tsp garam masala
  • 1/2 tsp curry powder
  • 50g tomato paste
  • 1 diced onion
  • 2 chillis
  • 2 bay leaves
  • 1 Tbsp ginger garlic
    100g butter cut into 4 blocks
  • Bunch of fresh coriander
  • 1 1/2 cups double cream yogurt
  • 1/2 packet cooked pasta about 250g

Butter Chicken Pasta

  1. Add 25g butter along with marinated chicken to a heated pan and fry until your chicken is 3/4 way cooked. Tip: you can also add your chicken pieces to the air fryer for 7min a side.
  2. Remove chicken from the pan, in the same pan add in 25g butter along with chopped onion, chili, Bay leaves. Fry until translucent.
  3. Add in Ginger and garlic and fry for 30 seconds.
  4. Add in the rest of the spices and fry for 30 seconds.
  5. Add in 3/4 cup of water and cook on a medium heat unit you form a paste.
  6. Once a paste is formed, add in 50g tomato paste and 1/2 cup of water and 1/4 cup fresh chopped coriander.
  7. Cook again until a paste is formed then add in 1 cup double cream yogurt and mix well. (you can blend your sauce at this point)
  8. Cook this for 5 minutes then add your chicken back to the pot along with 1/2 cup double cream yogurt, fresh coriander, 50g butter and salt.
  9. Cook for a further 5 minutes on low heat.
    10. Add in your cooked pasta along with some pasta water. Cook for 3 minutes and then you can plate up, serve and enjoy!
    Preheat the oven to 200 °C. Bake for 15-20 minutes or until the hake is cooked through and flakes easily. Serve immediately with your choice of side dish.
