Ingredients:
- 2 ripe avocados
- 4 slices of sourdough bread
- 1 Tbsp lemon juice
- 1 Tbsp olive oil
- Salt and pepper to taste
To serve:
- coriander
- chili flakes
- lemon wedge
How To Make Smashed Avocado on Toast
- Cut the avocados in half, remove the pits, and scoop the flesh into a bowl.
- Add the lemon juice, olive oil and seasoning to the bowl.
- Mash the avocados with a fork until chunky, then set aside.
- Toast bread until golden and crispy, then spread smashed avocado mixed evenly over each slice of bread, garnish with chili flakes & fresh coriander.
Ingredients:
- 4 potatoes, peeled, diced & parboiled
- 1 Tbsp olive oil
- 1 red pepper, diced
- 1 green pepper, diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 4 eggs
To serve:
- Eggs, fried or poached
- coriander
- avocado slices
How To Make Spicy Potato Hash Topped with Eggs
- In a large skillet, heat olive oil over medium-high heat, add in onions and cook until translucent.
- Add in garlic, red pepper, and green pepper, allow this to cook for 4-5 minutes until the peppers are tender.
- Once the peppers are tender add in potatoes and spices, season to taste with salt and pepper.
- Cook for about 8 minutes until potatoes are golden and crispy.
- Serve immediately with fried eggs, avocado slices and garnish with fresh coriander.

- 4 large eggs
- 2 tablespoons milk
- ½ cup cherry tomatoes, halved
- 1 cup fresh spinach, chopped
- ¼ cup feta cheese, crumbled
- 1 tablespoon olive oil or butter
- Salt & pepper to taste
How To Make Tomato, Spinach & Feta Omelette
- Heat the olive oil or butter in a non-stick skillet over medium heat.
- Add spinach and allow the spinach to cook until wilted.
- In a large bowl whisk together eggs and milk, until well combined then pour the egg mixture into the skillet, tilting the pan to ensure it spreads evenly.
- Allow the eggs to cook undisturbed for about 2-3 minutes until they start to set around the edges.
- Sprinkle in the cherry tomatoes and feta cheese evenly over one half of the omelette, carefully fold the other half of the omelette over the fillings using a spatula.
- Cook for another 1-2 minutes until the eggs are fully cooked.
