Citro-Soda Cranberry & Lemon Dessert Bars

For cookie base:
1 ½ cups flour
1/3 cup sugar
1 tsp vanilla essence
¾ cup salted butter, melted
For lemon custard:
1 cup sugar
¼ cup flour
Pinch of salt
½ cup lemon juice
1 cup cranberry jelly/jam
Icing sugar to dust
Preheat the oven to 180C and prepare a square baking tin
In a large bowl, whisk together the flour and sugar. Create a well in the centre of the flour, add the melted butter and vanilla essence and combine the dry ingredients with the wet.
Bake in the oven for 15 minutes or until the edges are golden brown, remove from the oven and allow to cool
In the meantime, make the lemon custard by combining the sugar, flour, salt, eggs and lemon juice in a bowl.
Spread the cranberry jelly over the baked biscuit and pour over the lemon custard.
Return to the oven and bake for a further 15-20 minutes or until set.
Remove from the oven, dust with icing sugar and serve.
Chefs Tip: For a little extra crunch, you can top the bake with toasted almond or coconut flakes. Refrigerate and store for up to 4 days.
