Get your nacho fix and with a healthy twist!
Serves: 4 – 5
Time: 15 minutes
Ingredients:
1 large cauliflower, sliced into florets
2 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
Salt and pepper to taste
½ red onion, finely chopped
1 cup kidney beans, drained
1 cup corn kernels
1 cup cherry tomatoes, halved
1 cup cheddar cheese, grated
2 pickled jalapenos, seeds removed and sliced
Bliss Double Cream yoghurt, plain flavor, for serving
Fresh coriander for serving
Method:
Preheat the oven to 180C
Coat the cauliflower florets with the olive oil, garlic powder, paprika and season with salt and pepper.
Place onto a greased baking sheet and bake in the oven for 20 minutes. Alternatively, you can air fry the cauliflower for 15 minutes.
Add half a layer to an oven dish and add half of the onion, kidney beans, corn, tomatoes, cheese and jalapenos. Layer the rest of the cauliflower on top and the final layer of the rest of the ingredients.
Bake for 7-10 minutes until the cheese is melted. Dollop with Bliss yoghurt and garnish with fresh coriander.
