Clover Elite Cheese Focaccia
Serve when it’s fresh out of the oven for that warm, crusty chewiness.
Time: 45 minutes
3 cups bread dough flour
½ cup olive oil
1 tbsp dry yeast
1 tsp sugar
2 cups warm water
½ tsp salt
For the topping
2-3 discs Clover Feta cheese, Herb flavour
Clover Cheese portions, Gouda and Cheddar
½ cup olive, halved
1 tbsp Zatar
1 Mediterranean cucumber, sliced
1/2 cup cherry tomatoes, halved
In a bowl, mix together the water, yeast and sugar. Mix and set aside to froth.
In a mixing bowl, combine the flour and salt and mix. Add in the olive oil and water mixture and mix to combine until a dough starts to form.
Add flour to a surface and knead the dough for a few minutes. Place into a greased bowl, cover and allow to rise until double in size in a warm place.
Coat a large baking sheet/dish with olive oil and lightly spread the dough. Place in a warm place for a few minutes.
Imprint your finger throughout the dough to create indents and drizzle with olive oil and sea salt flakes. Bake in a preheated oven at 180C for 30-45 minutes or until the edges are golden. Add toppings once its baked.
Crumble more feta on top before slicing and serving.
Chefs Tip: Add meat for a whole meal! Or press in blocks of feta, olives, sundried tomatoes into the bread before baking.
