Coconut Chicken Curry

Zaldha Hennessy is back in the kitchen to share her simple, quick, and easy coconut chicken curry recipe with us.

Ingredients:

For the pastry:

  • 1 Tbsp olive oil
  • 1 onion, diced
  • 100g tomato paste
  • 1 green chili, diced
  • 1 tsp red chili flakes
  • 1 tsp curry powder
  • 1 Tbsp crushed garlic
  • Juice of 1 lemon
  • 1 tin coconut cream
  • Handful of basil leaves
  • 6-8 chicken breast fillets, sliced
  • salt and pepper

To serve:

  • fresh coriander leaves
  • toasted coconut flakes
  • garlic naan

How To Make Coconut Chicken Curry

  1. Fry onion in oil until translucent.
  2. Add tomato paste, green chili, chili flakes, curry powder and garlic.
  3. Cook until fragrant.
  4. Add coconut cream and lemon juice and simmer for 5 minutes.
  5. Add chicken and cook, while stirring, for 8 – 10 minutes or until chicken is just cooked.
  6. Add basil leaves and mix through.
  7. Season to taste.
  8. Serve with fresh coriander and coconut flakes on top.
