Coconut Chicken Curry Zaldha Hennessy is back in the kitchen to share her simple, quick, and easy coconut chicken curry recipe with us.Recipe by Zaldha Hennessy Ingredients:For the pastry:1 Tbsp olive oil1 onion, diced100g tomato paste1 green chili, diced1 tsp red chili flakes1 tsp curry powder1 Tbsp crushed garlicJuice of 1 lemon1 tin coconut creamHandful of basil leaves6-8 chicken breast fillets, slicedsalt and pepperTo serve:fresh coriander leavestoasted coconut flakesgarlic naan How To Make Coconut Chicken CurryFry onion in oil until translucent.Add tomato paste, green chili, chili flakes, curry powder and garlic.Cook until fragrant.Add coconut cream and lemon juice and simmer for 5 minutes.Add chicken and cook, while stirring, for 8 – 10 minutes or until chicken is just cooked.Add basil leaves and mix through.Season to taste.Serve with fresh coriander and coconut flakes on top.
