Cowboy Buttered Grilled Fish
Cowboy Butter is butter a sauce made with fresh garlic, lemon, herbs and spices and Clover Way Better Butter Spread!

Ingredients:
- For the cowboy butter:
- 1kg hake fillets
- ½ cup Clover Butter Spread
- Juice & zest of 1 lemon
- 1 Tbsp dill, chopped
- ¼ cup parsley, chopped
- 2 cloves garlic, minced
- salt & pepper
- For the zesty asparagus & capers:
- 100g asparagus
- 1 Tbsp capers
- 1 Tbsp olive oil
- 1 Tbsp lemon zest & juice
- salt & pepper
- To serve:
- grilled lemons
- fresh parsley
How To Make Cowboy Butter Grilled Fish
- Preheat oven to 180°C. Pat hake fillets dry with paper towel and place onto a baking tray and set aside.
- In a medium bowl, add Clover Butter Spread, lemon juice, zest, dill, parsley, garlic, salt & pepper and mix until well combined.
- Spread half of the cowboy butter evenly over the hake, then place asparagus, capers, olive, lemon juice, zest, salt & pepper in a large bowl and mix until the asparagus is coated then place asparagus into the baking tray with fish and bake in the oven for 15 minutes, then remove from the oven and spread remaining cowboy butter over the fish and bake for another 5 minutes.
- Remove from the oven and serve immediately with a salad and grilled lemons. Enjoy!
