Crispy Cheesy Baked Orzo with Cajun Sausage Crumble

Ingredients:
- 3 tbsp Olive Pride
- 500g lamb sausage, casing removed
- 2 tbsp Cajun seasoning
- 1 Spanish smoked paprika
- 2 tsp mixed herbs
- Salt
- Pepper
- 250g cream cheese
- 1 onion, diced
- 3 garlic cloves, minced
- 2 tbsp white wine vinegar
- 500g orzo
- 1.5L chicken stock
- 200g baby spinach
- Handful fresh parsley, chopped
- 1 cup bread crumbs
- ½ cup grated parmesan cheese
- ½ cup crispy onion sprinkle
How To Make Crispy Cheesy Baked Orzo with Cajun Sausage Crumble
- Heat a large cast iron skillet on medium heat and drizzle the oil.
- Add the sausages and use wooden spoon to saute and break the sausages into smaller pieces.
- Cook until browned then add the cajun seasoning, paprika and mixed herbs. Saute for a further 1-2 minutes, until fragrant.
- Remove the sausages from the pan and set aside.
- Preheat the oven on the grill function
- Add the onion and garlic, followed by the vinegar to deglaze the pan. Saute until soft then add the orzo and stock.
- Stir continuously, cooking for 5-7 minutes, under al dente as the pasta will continue to cook in the oven
- Add the cream cheese, spinach, parsley and sausages. Season to taste.
- Sprinkle the breadcrumbs, cheese and crispy onions over the top. Drizzle with a little oil.
- Grill until for 5 minutes or util golden and bubbly.
