Crispy Cheesy Baked Orzo with Cajun Sausage Crumble

Ingredients:

  • 3 tbsp Olive Pride
  • 500g lamb sausage, casing removed
  • 2 tbsp Cajun seasoning
  • 1 Spanish smoked paprika
  • 2 tsp mixed herbs
  • Salt
  • Pepper
  • 250g cream cheese
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 2 tbsp white wine vinegar
  • 500g orzo
  • 1.5L chicken stock
  • 200g baby spinach
  • Handful fresh parsley, chopped
  • 1 cup bread crumbs
  • ½ cup grated parmesan cheese
  • ½ cup crispy onion sprinkle

How To Make Crispy Cheesy Baked Orzo with Cajun Sausage Crumble

  1. Heat a large cast iron skillet on medium heat and drizzle the oil.
  2. Add the sausages and use wooden spoon to saute and break the sausages into smaller pieces.
  3. Cook until browned then add the cajun seasoning, paprika and mixed herbs. Saute for a further 1-2 minutes, until fragrant.
  4. Remove the sausages from the pan and set aside.
  5. Preheat the oven on the grill function
  6. Add the onion and garlic, followed by the vinegar to deglaze the pan. Saute until soft then add the orzo and stock.
  7. Stir continuously, cooking for 5-7 minutes, under al dente as the pasta will continue to cook in the oven
  8. Add the cream cheese, spinach, parsley and sausages. Season to taste.
  9. Sprinkle the breadcrumbs, cheese and crispy onions over the top. Drizzle with a little oil.
  10. Grill until for 5 minutes or util golden and bubbly.
