Crispy Garlic Mushrooms
Served with a creamy chive dip, these can easily be enjoyed as a starter, side or canape.

Ingredients:
150g panko breadcrumbs
2 garlic cloves minced
1/2 tsp smoked paprika
2 eggs
80g flour
250g small button mushrooms
Olive oil
For the dip:
250g plain cream cheese
½ cup Clover Authentikos
1 tbsp fresh chives, chopped
Black pepper
Method:
Preheat an air fryer and prepare the air fryer basket. Place the flour in a bowl. Beat the eggs in separate bowl. In a shallow dish mix the panko crumbs with the garlic, smoked paprika and season with salt and pepper. Wipe the mushrooms with a damp cloth or paper towel then in batches and toss the mushrooms in the flour, then the egg and finally the bread crumbs. Place the coated mushrooms in the air fryer basket and spray with cooking spray, cook for 15 minutes. Halfway through the cooking process, flip the mushrooms to ensure that the mushrooms evenly crisp up. In the meantime, combine the ingredients for the dip and season to taste. Serve the mushrooms immediately with the dip.
Chefs Tip: You can also do this in the oven at 180 degrees. Avoid rinsing mushrooms under direct water as often as you can because they absorb liquid and will release water as they cook resulting in a soggy mushroom. A quick wipe with a damp towel or paper cloth is always best.
