Crispy Parmesan and Rosemary Roasted Potatoes

Golden and fragrant, these Parmesan and Rosemary Roasted Potatoes are made irresistibly crispy with Clover Olive Pride Cooking Spray!

Ingredients:

  • Clover Olive Pride Non-Stick Cooking Spray
  • 750g baby potatoes (halved)
  • 2 Tbsp olive oil
  • 1/2 cup grated parmesan 
  • 1/2 tsp garlic powder
  • 1 tsp rosemary chopped
  • 1/2 tsp paprika
  • Salt & black pepper

For the Dipping Sauce

  • 3/4 cups sour cream
  • 1/4 cup finely chopped chives

How To Make Crispy Parmesan Potatoes

  1. Preheat the oven to 200C °
  2. In a big bowl combine together the parmesan, garlic powder, rosemary and paprika, 
  3. Season and put aside.
  4. Spray the glass baking dish with the Clover Olive Pride Non-Stick Cooking Spray. Use a spoon to scatter the parmesan mixture  over the base. Spread as evenly as you can. 
  5. Place potatoes cut side down, pressing firmly. Drizzle with oil and sprinkle with salt. 
  6. Bake the potatoes until they are soft and the parmesan crust is deeply golden.
  7. Rest for 5 minutes and serve with the dipping sauce.
