Croissant Bread Pudding with Berry Sauce

Ingredients:

  • 4 – 5 almond croissants
  • 3 large Free-Range Eggs
  • 1 cup cream
  • ½ cup milk
  • 2 Tbsp vanilla paste
  • ¼ cup sugar, plus ¼ extra for sprinkling

For the berry sauce:

  • 2 cups blackberries
  • 4 Tbsp sugar
  • 1 Tbsp lemon juice
  • 1 Tbsp vanilla paste

How To Make Croissant Bread Pudding with Berry Sauce

  1. Preheat the oven to 180°C and grease a baking dish with cooking spray. Start by roughly tearing croissants, then in a large mixing bowl add in eggs, cream, milk, vanilla paste, sugar and mix until well combined.
  2. Place the croissants into the custard mixture and allow it to stand for about 15 – 20 minutes. Pour the mixture into the prepared baking dish and sprinkle over castor sugar. Bake for 35 – 40 minutes.
  3. Meanwhile prepare the berry sauce, place blackberries, sugar and lemon juice in a bowl stir gently and allow it to sit for a few minutes, this will help the berries to release their natural juices, then transfer the macerated berries into a saucepan over medium heat along with vanilla paste, allow it cook until reduced and slightly thickened then transfer into a Nutri bullet and blend until smooth.
