Croissant Bread Pudding with Berry Sauce

Ingredients:
- 4 – 5 almond croissants
- 3 large Free-Range Eggs
- 1 cup cream
- ½ cup milk
- 2 Tbsp vanilla paste
- ¼ cup sugar, plus ¼ extra for sprinkling
For the berry sauce:
- 2 cups blackberries
- 4 Tbsp sugar
- 1 Tbsp lemon juice
- 1 Tbsp vanilla paste
How To Make Croissant Bread Pudding with Berry Sauce
- Preheat the oven to 180°C and grease a baking dish with cooking spray. Start by roughly tearing croissants, then in a large mixing bowl add in eggs, cream, milk, vanilla paste, sugar and mix until well combined.
- Place the croissants into the custard mixture and allow it to stand for about 15 – 20 minutes. Pour the mixture into the prepared baking dish and sprinkle over castor sugar. Bake for 35 – 40 minutes.
- Meanwhile prepare the berry sauce, place blackberries, sugar and lemon juice in a bowl stir gently and allow it to sit for a few minutes, this will help the berries to release their natural juices, then transfer the macerated berries into a saucepan over medium heat along with vanilla paste, allow it cook until reduced and slightly thickened then transfer into a Nutri bullet and blend until smooth.
